I made this gluten free Almond Flour Banana Bread every week for the last three weeks and I am still not over it. I love how easy it is to make. The flavor is absolutely delicious and the texture is perfect without being too dense. I also love that I can use this as a basic recipe and make different variations of banana bread with it.

I love all the baked goodies with almond flour. I shared my almond cookies recipe a few years ago. I also make an amaazing Almond cake, which I really need to share with you all soon. This almond flour banana bread is also one of my favorite recipes to make whenever I have ripened bananas (which is almost every week because we somehow never finish our bananas)

Variations of Almond Flour Banana Bread

The best thing about this almond flour banana bread recipe is, it's very simple and basic. You can use this recipe and create so many variations of banana bread with different add-ons, toppings or flavorings. Here are a few add-ons you can use:

  • Chocolate chips
  • Nuts such as walnuts/pecans/ cashews
  • Coconut flavor with coconut extract and shredded coconut
  • Spiced banana bread with cinnamon/ cardamom/ nutmeg
  • Peanut butter or cashew butter banana bread (keep in mind this can make the bread denser. To make a fluffier bread you can whip your egg whites seperately and add to the batter)

Substituting ingredients

If you don't want to use sugar, you can substitute that with other natural sweeteners in this banana bread. For the given amount of 1/3 cup of sugar, you can use 1/4 cup of honey. Or use 1/4 cup to 1/3 cup of maple syrup.

Instead of butter, you can also use coconut oil or any neutral oil of your choice. You can also use vegan butter or margarine.

Description

Gluten free Banana bread made with almond flour. Delicious, moist and very easy to make with a few pantry ingredients.

Ingredients
  • 2 Ripe bananas (2 bananas = 200g mashed bananas)
  • 1/3 cup Sugar (70g)
  • 2 Large eggs
  • 1/4 cup melted unsalted butter (for salted butter, cut down additional salt by half)
  • 2 tsp Pure vanilla extract
  • 1/4 tsp Salt
  • 2 1/4 cup finely ground blanched almond flour (225g)
  • 1 1/2 tsp Baking powder
  • 2 tbsp Sliced almonds
Instructions

    Preheat the oven to 350F. Also lined a loaf pan with parchment paper. (I use this 8 * 5 loaf pan).

    Mash bananas using a fork. Add sugar and mix until sugar is dissolved. 

  3. Add the eggs. Whisk with the fork until there aren't any visible egg yolks and the mixture is slightly frothy.

    Add butter, vanilla and salt. Mix well.

    Add the almond flour and baking powder (make sure the baking powder is lump-free). Mix well to form a batter.

    Pour the batter into a loaf pan. Sprinkle the sliced almonds on the top.

    Bake the bread for 45 - 50 minutes or until when you insert a toothpick it comes out clean or with few crumbs attached. Take the bread out from the pan and cool it on a cooling rack for about 15 - 20 minutes. Slice & Enjoy!!
